Biscotti comes from Medieval Latin bis coctus, meaning, “twice cooked". As in earlier times they were usually made in loaves, sliced and twice cooked. This made them harder so that they could be stored for long periods of time. Because they were usually hard, the cookies are ideal for dipping in coffee or wine. The word "biscotti" has come to be used as a generic word, which refers simply to any cookie. There are many varieties of biscotti made throughout Italy. Every region has their specialties and some are even just found in a particular village. They have become a favorite cookie served in café’s and coffee houses all over the world.
